Re-fermented in bottle, ancestral

Lively Riesling is called “Cartesium”; as Cartesio was a mathematics and philosopher, our Cartesium is fruit of technique and passion, it is naturally fermented in bottled, ancestral method, unfiltered and not separated from yeasts, so it remains veiled and preserves the peculiarities of the wine.

Cartesium is produced with Italic Riesling grapes, many of them spread along the vineyards cultivated with red grapes. Over the years we have designed a detail map, but anyway we need a strong effort to find and harvest them at the right time. Such grapes, grown in different pedoclimatic conditions and with a different state of ripening, carry out a wine with a strong minerality and a unique bouquet.

Italic Riesling

Delicate, characteristic, fragrant, aromatic

Fresh, balanced and mineral

Aperitifs, lean appetizer, risotto, pizzas and delicate dishes, vegetables, fish, crustaceans, white meats

Shake softly to suspend lees and serve at 10-12 °C in tulip glasses

1 – 5 years after the harvest

Not filtered, presence of lees is a natural process due to fermentation and it is an indication of a genuine product
